we were thinking of going during spring break, and doing disney for a few days as well as knotts berry farm and the ocean for the remainder of the trip so my boys can play in real sand and waves.

I found this neat hotel for families - they have suites with a queen bed and a set of bunk beds. It's in Anaheim. Here's the link:

They have packages with Disney tickets and your room. What I would do is stay at that hotel the entire trip, go to Disneyland your couple of days and then over to Knotts (they're in cities right next to one another) and then go to the beaches that are West of Anaheim. That way you don't have to move hotels everytime you want to do something else on your vacation.
Everything is so close that it doesn't pay to move hotels with a family everytime you are going to do a new attraction in or near Disneyland. The beaches are great in that area too. This package with a room and tickets might be a good deal - I'd look on their website and then call them and see what they could put together for you in package.

I know that disney has a DVD that they give free online so you can plan in advance and they give all info there.
They also have lists of beautiful hotels near disneyland and also disneyland hotels.
